Spiced Fruit Traybake

    A wonderfully spiced cake, which is perfect for Christmas. The cake bars are tender, delicious and packed full of flavour. They are also gluten-free!

    Serves: 80 

    • 8 eggs
    • 250g caster sugar
    • 2 teaspoons vanilla sugar
    • 1-2 level teaspoons gingerbread spice (cinnamon works as well)
    • 250g ground almonds
    • 250g ground hazelnuts
    • 125g raisins
    • 125g currants
    • For the Filling
    • chocolate or lemon icing
    • peeled and halved almonds, glace cherries, etc.

    1. Line a baking tray with baking parchment and preheat oven to 180 C / Gas 4.
    2. Beat eggs in a bowl until fluffy. Gradually stir in sugar, vanilla sugar and spice. Stir in almonds and walnuts and finally fold in raisins and currants.
    3. Transfer mixture on the prepared baking tray and bake in preheated oven for about 20 minutes.
    4. Lay baking parchment on work surface and tip the finished cake onto it. Remove the baking parchment from the bottom.
    5. Coat the top of the cake with chocolate or lemon icing and decorate however you like. Cut into small diamonds or rectangles while still warm.
