Chewy almond macaroons

    These macaroons are quick to throw together. Perfect for a sugary treat, or to wrap up in small cellophane bags for Christmas gifts.

    Serves: 45 

    • 3 egg whites
    • 150g caster sugar
    • 1 teaspoon vanilla sugar
    • 2 drops almond oil (or almond extract to taste)
    • 150g ground almonds
    • 25g plain flour

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 180 C / Gas 4.
    2. Beat egg whites until stiff. Gradually add sugar and vanilla sugar.
    3. Fold the almond oil, ground almonds and flour.
    4. Drop 2 tablespoons of the mixture into piles onto a greased baking tray, leaving enough room to spread.
    5. Bake for 15-20 minutes. Cool on a wire rack.
