Pasta with Beef and Pineapple

About this recipe: This is a quick and easy dish, which is perfect for weeknights. Pasta is tossed with minced beef and pineapple in a creamy curried sauce.


Serves: 4 

  • 500g short pasta (penne or rigatoni)
  • 400g minced beef
  • 1 leek, washed and cut into thin rings
  • 2 tablespoons olive oil
  • 1 (432g) tin pineapple chunks
  • 3 tablespoons curry powder
  • 1 tablespoon stock granules
  • salt
  • pepper
  • 200ml double cream
  • 6-7 tablespoons tomato ketchup
  • 3-4 tablespoons tomato puree

  1. Cook pasta according to package instructions.
  2. Heat oil in a large frying pan and saute mince until brown and crumbly. Drain pineapple, but save juice.
  3. Add leek and drained pineapple to the mince and saute for an additional 5 minutes over high heat. Deglaze with a little pineapple juice.
  4. Season with curry powder, stock granules and pepper. Add ketchup and tomato puree; mix everything well and simmer covered for 5-8 minutes on low heat. If necessary, add a little more pineapple juice.
  5. Stir in cream. Drain pasta and add to pasta sauce in the pan. Mix everything well and serve.
