Super-Nutty Biscuits

    These little treats look like open sandwiches. Hazelnut biscuits are spread with a rum icing and then topped with chopped pistachios.

    Serves: 80 

    • For the Biscuits
    • 100g plain flour
    • 165g hazelnuts, ground
    • 125g caster sugar
    • 100g butter
    • 2 tablespoons unsweetened cocoa powder
    • 1 egg
    • For the Icing
    • 125g icing sugar
    • 1 egg yolk
    • rum or lemon juice
    • chopped pistachios

    1. Work all the biscuits ingredients into a smooth dough. Shape into 5cm oval rolls, wrap and chill for 1 hour.
    2. Preheat oven to 150 C / Gas 2. Cut the rolls into 5mm thick slices, place on a lightly greased baking tray and bake for about 20 minutes.
    3. Remove biscuits from the tray and cool on a wire rack.
    4. For the icing: Mix icing sugar with egg yolks, rum or lemon juice. Spoon a circle on the biscuits and sprinkle with chopped pistachios.
