Chocolate Almond Shortbread

    A super buttery biscuit, which is incredibly moreish. Shortbread biscuits are enriched with ground almonds, baked and dipped in chocolate. You can use any other ground nuts you prefer.

    Makes: 50 

    • 250g butter
    • 250g caster sugar
    • 1 teaspoon vanilla sugar
    • 1 egg
    • 375g plain flour
    • 250g ground almonds
    • To Decorate
    • chocolate cake covering, melted

    1. Beat butter, sugar and vanilla sugar until fluffy. Stir in egg and flour and stir in the almonds last.
    2. Preheat oven to 190 C / Gas 5. Line a baking tray with baking parchment Pour the batter into a piping bag with star nozzle. Pipe into any shape you prefer onto preparing baking tray.
    3. Bake shortbread in preheated oven for 10-15 minutes.
    4. Leave the biscuits to cool and dip halfway in chocolate covering. Let set and store in an airtight container.

    Chocolate cake covering

    Can be substituted for eating chocolate, however, the finish will not be the same.

    I used a butterfly and rabbit shape because it was too stiff for a piping bag. It breaks very quickly, too.  -  27 Aug 2015
