Bacon and Onion Flan

    A deliciously different flan recipe, which is made with a yeasted-dough base. It's packed full of sauteed onions, bacon, eggs and seasoned with caraway seeds.

    Serves: 6 

    • 20g fresh yeast or 1 (7g) sachet dried active baking yeast
    • 125ml milk, lukewarm
    • 1 pinch caster sugar
    • 250g plain flour
    • 3 eggs, divided
    • salt
    • 25g margarine
    • 100g margarine
    • 1kg onions
    • 25g bacon, diced
    • caraway seeds

    1. Crumble yeast into lukewarm milk, add 1 pinch of sugar, set aside for 10 minutes until frothy.
    2. Mix flour, salt and 25g margarine in a bowl, add 1 egg and the yeast-milk mixture. Knead dough with the electric mixer and dough hook or by hand.
    3. Cover with foil and let rise in a warm place until the dough has doubled in size, about 45 to 60 minutes.
    4. Meanwhile, peel onions and dice. Saute onions in 100g margarine or until soft and translucent. Transfer onions into a bowl, add 2 eggs and salt to the onions while they are still hot.
    5. Grease a springform tin.
    6. Line tin with yeast dough and allow to rise for an additional 15 minutes.
    7. Preheat the oven to 220 C / Gas 7. Pour onion mixture onto the dough, then add bacon and sprinkle with caraway seeds. Bake in preheated oven for 40-50 minutes.

    Can be purchased from bakeries that make and bake their own bread; you will need to ask for it.
