South African meatloaf

    A delicious tasting meatloaf, which is simple to make and tastes fab. Beef mince is baked with sultanas, chutney, almonds, lemon zest and other seasonings. Enjoy thickly sliced for dinner or lunch. It makes the perfect sandwich filler!

    Serves: 8 

    • 1 slice day-old bread (white or brown)
    • 100ml milk
    • 25g blanched almonds
    • 2 tablespoons olive oil
    • 2 large onions, finely chopped
    • 2 large cloves garlic, finely chopped
    • 1 level tablespoon mild curry powder
    • 2 eggs
    • 1 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper
    • 1/2 teaspoon ground turmeric
    • 1 lemon, juiced
    • 3 tablespoons mango chutney, finely chopped
    • 40g sultanas, finely chopped
    • 1 teaspoon grated lemon zest
    • 900g minced beef

    1. Preheat oven to 180 C / Gas 4.
    2. In a small bowl, soak bread in milk.
    3. Pan-fry almonds in a small pan and finely chop.
    4. Heat oil in a pan. Sauté onions and garlic until golden brown. Add the curry powder.
    5. Squeeze bread dry and set expressed milk aside.
    6. In a large bowl, mix onion, bread and all the other ingredients (with the exception of 1 egg) together.
    7. Grease loaf tin. Fill with mixture and smooth out top. Bake in preheated oven 1 hour.
    8. Beat remaining egg with milk and pour over the meatloaf. Bake for an additional 20 minutes or until meatloaf is browned on top.
