About this recipe: These delicious buttery biscuits are simple to make and taste fantastic. Cut out the biscuits into any shape you prefer, seasonal or otherwise.


Serves: 60 

  • 125g butter
  • 1 tablespoon caster sugar
  • 1 egg yolk
  • 200g plain flour
  • For the Topping
  • 1 egg yolk
  • milk
  • caster sugar
  • butter for greasing

  1. For the biscuits: Beat butter and sugar until fluffy. Mix in egg yolk and knead in flour to form a smooth dough. Wrap and chill for 1 hour.
  2. Grease a baking tray. Roll out dough on a floured surface and cut out shapes of your choice. Place the biscuits on the prepared baking tray.
  3. Preheat oven to 180 C / Gas 4 and bake in preheated oven 8-10 minutes or until lightly golden.
  4. For the Icing: Mix egg yolk with a little milk; brush over biscuits and sprinkle with sugar.

it wasn't sweet enough so add about 4-5 tbs of sugar and the topping tasted of egg and wasn't a hit at all. the pastry wouldn't roll so we had to squeeze it into the cookie cutters if your making this omit the icing and use normal icing, add more sugar to the dough, and roll out straight away instead of cooling. - 03 Aug 2013
