About this recipe:This delicious German apple cake is simple to make, tastes fab and with fanned apples arranged over the top of the cake - it looks beautiful, too. Sprinkling sugar over the apples caramelises them nicely.
4 eggs, separated
125g caster sugar
100g unsalted butter, melted
1 lemon, zested and juiced
150g plain flour
1 teaspoon baking powder
1 pinch salt
3 to 4 apples - peeled, cored, halved and thinly sliced
extra sugar, for sprinkling

Cream together the egg yolk and sugar till pale and smooth, then whisk in butter, lemon juice and lemon zest. Beat until the cake mixture is light and fluffy.
In a separate bowl, sieve in flour, salt and baking powder. Mix to combine.
Fold egg whites and flour mixture into yolk mixture, alternating between each addition. Pour cake mixture into tin and smooth top out. Gently fan apart the apple slices and arrange onto the top of the cake. Sprinkle with sugar.
Preheat oven to 180 C / Gas 4. Grease a round springform cake tin with butter and dust with flour. Set aside.
Bake in preheated oven for 40 minutes, or till a skewer inserted in the sponge comes out clean.
