Poppy Seed Swirl Biscuits

    These biscuits are delicious and pretty. A buttery biscuit dough is rolled with a poppy seed cream, sliced and baked. Enjoy with a big mug of tea.

    Serves: 8 

    • For the Biscuits
    • 200g plain flour
    • 50g caster sugar
    • 1 teaspoon vanilla sugar
    • 150g butter
    • For the Filling
    • 250g poppy seed cake mix
    • 5-7 tablespoons cream
    • 1/2 teaspoon ground cinnamon

    1. Work flour, sugar, vanilla sugar and butter into a smooth dough. Wrap and chill for 30 minutes.
    2. Mix together cream, cake mix and cinnamon until smooth.
    3. Roll out dough to 35cm x 20cm rectangle (about 3mm thick). Spread cream mixture evenly on top.
    4. From the long side, roll up like a swiss roll. The resulting roll should be about 3cm in diameter. Wrap and chill for 30-60 minutes.
    5. Preheat oven to 180 C / Gas 4 and line a baking tray with baking parchment.
    6. Cut roll into 4mm slices and lay on the prepared tray. Bake for 20 minutes in preheated oven. Cool and store in tins.
