Roast turkey with herbed butter

    This turkey is juicy, tender and packed full of flavour. The secret is the herb butter. It's massaged under the skin of the turkey before being roasted. Enjoy for a delectable Sunday lunch or Christmas dinner.

    Serves: 10 

    • Herb Butter
    • 125g butter, softened
    • 1 teaspoon crushed dried thyme (or 1 tablespoon fresh, finely chopped)
    • 1 teaspoon crushed dried sage (or 1 tablespoon fresh, finely chopped)
    • 2 tablespoons chopped fresh parsley
    • 1 tablespoon chopped fresh chives
    • 1 tablespoon dried rosemary (or 1 tablespoon fresh)
    • salt
    • 1 (7kg) whole, ready-to-cook turkey
    • salt
    • freshly ground black pepper
    • 1-2 tablespoons cornflour

    1. Mix all the herb butter ingredients together. Set aside.
    2. Preheat oven to 220 C / Gas 7.
    3. Rub the insides of turkey with salt and pepper.
    4. Carefully peel back skin of the turkey on the breast side as far down the sides as possible (try not to tear). Do this by running you fingers under the skin. When the whole skin is loose, put two thirds of the herb butter under the skin.
    5. Tie legs and wings together with cooking twine so that the turkey is as tight as possible and won't dry out.
    6. Place turkey breast side up in a roasting tin and cover loosely with foil. Transfer to oven and reduce the temperature to 180 C / Gas 4. Cook for 3 hours.
    7. Remove foil. Spread the remaining herb butter on the turkey and cook for another 45 minutes, basting occasionally. Continue cooking turkey until the internal temperature reaches at least 80 degrees C. Stand for 30 minutes before carving, covered with foil.
    8. Meanwhile, skim fat off the drippings. Pour through a sieve into a small saucepan and bring to the boil. Depending on the amount of gravy, add 1-2 tablespoons cornflour mixed with a little water. Stir until smooth and heat until thick. Serve with turkey.
