It takes only one hour to make this delicious cake. Apples are baked on top of a buttery sponge cake. It's then brushed with apricot jam and a lemon icing. Enjoy for dessert, afternoon tea or elevenses.

For the cake
125g unsalted butter or margarine
125g caster sugar
4 drops lemon extract
200g plain flour
2 teaspoons baking powder
4 tablespoons milk
3 apples - peeled, cored and sliced
For the topping
2 to 3 tablespoons apricot jam, melted
Method Prep:20min › Cook:40min › Ready in:1hr
Preheat oven to 180 C / Gas 4. Grease a round springform cake tin.
Beat butter until fluffy, then gradually beat in sugar, eggs, salt and lemon extract.
Mix together flour and baking powder, sift into the batter and fold in. Stir in just enough milk to make a cake-like batter. Fold in apples and pour into prepared tin.
Bake in preheated oven for 40 to 50 minutes.
Brush with apricot jam whilst warm. Mix just enough icing sugar and lemon juice to make an drizzly icing; brush onto cake.
