About this recipe: These gluten-free biscuits are incredibly nutty, chocolaty and oh-so-moreish. They are the perfect Christmas biscuit that can be enjoyed anytime.


Makes: 50 biscuits

  • 200g walnuts
  • 50g almonds
  • 100g dark chocolate, chopped
  • 200g icing sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 tablespoon rum
  • 2 egg whites
  • 2 to 3 tablespoons demerara sugar
  • 50 walnut halves

  1. Finely grind 200g walnuts, almonds and chocolate in a food processor. Add icing sugar, cinnamon, cloves and rum.
  2. Beat egg whites until stiff. Fold into nut mixture. The dough should be pliable. If it's too thin, add more ground almonds.
  3. Sprinkle a work surface with demerara sugar. Form the dough into two long logs of 3cm diameter. Wrap logs in cling film and chill for 2 hours.
  4. Preheat oven to 200 C / Gas 6. Line a baking tray with baking parchment.
  5. Cut rolls into 1cm thick slices and lay on prepared tray, leaving adequate room for spreading.
  6. Top each biscuit with a walnut half and bake in preheated oven for 8-10 minutes.
