Sausage bacon and tomato delight

    An easy meal of sausage, mushroom, potato, tomato and bacon cooked in the oven, very tasty and very presentable.

    Serves: 2 

    • 5 potatoes, peeled and chopped
    • oil
    • 1 onion, sliced
    • salt and pepper
    • 4 tomatoes
    • mixed herbs
    • 4 chipolata sausages
    • 4 slices back bacon
    • 2 large mushrooms

    1. Preheat the oven to 180 C / Gas 4.
    2. Pan fry potatoes in oil for 20 minutes slowly. Add onions to the pan and cook for another 25 minutes or until turning brown; season with salt and pepper to taste.
    3. Meanwhile, chop the tops off the tomatoes and generously sprinkle with mixed herbs and a little salt, add to an oven tray.
    4. Brown the sausages slightly in the same frying pan used for potatoes and wrap them individually with the back bacon, add the the oven tray.
    5. Put a little oil and butter in each mushroom and add to the oven tray.
    6. Bake in the preheated oven for about 40 minutes, serve with the potatoes and enjoy.
