In a mixing bowl, crack the eggs and lightly whisk. Add salt, pepper and a splash of cream. Whisk all together.
In a fry pan, heat over low heat the oil and a knob of butter. When melted pour in the egg mixture and using a wooden spoon constantly stir. This all comes together very quickly, stir until scrambled but not completely set. The eggs should be still quite wet. Gently stir in the last knob of butter to mix through. Plate up. The eggs will continue to cook when removed. Eat straight away.
