Chocolate cake delight

    Easy to bake, and yummy to eat! Enjoy! :) You can ice or fill this chocolate cake, or serve it as it is.

    Serves: 6 

    • 200g butter
    • 6 eggs, separated
    • 150g plain or dark chocolate, melted
    • 200g caster sugar
    • 2 tablespoons cocoa powder
    • 200g plain flour
    • 1 teaspoon baking powder
    • 40g biscuit crumbs (optional)

    1. Preheat oven to 180 C / Gas 4. Butter and flour a cake tin.
    2. Cream butter until fluffy. Add egg yolks, melted chocolate and 150g of the sugar. Beat until you get a thick cream.
    3. Sift cocoa powder, flour and baking powder and stir into mixture. Add biscuit crumbs.
    4. In another bowl, whisk egg whites until stiff and then add remaining 50g sugar.
    5. Stir one-third of whites into cake mixture thoroughly. Mix the rest gently into the mixture with a spoon. Pour mixture into your cake tin and smooth the top.
    6. Bake in preheated oven for 1 hour. Leave to cool for 30 minutes.

    Serving suggestion

    I usually slice my cake in half when cooled. Then I add buttercream or a thin layer of marzipan in the middle. Same goes for the top.
