Wash and trim broccoli and cut into florets, cook in lightly salted boiling water for around 5 minutes or to your liking, then drain.
Grate cheese and set aside.
Mix the creme fraiche with the parsley and season with salt and pepper.
Cut a cross in each potato and gently squeeze open, add 1 tsp of butter and a little of the cheese in each.
Mix the broccoli and creme fraiche mixture together, then spoon it into the potatoes, sprinkle with the remaining cheese, pop under a grill for 5 minutes to heat through.
For the jacket potatoes, wash and pat dry, prick all over with a fork, rub the potatoes with veg oil mixed with salt and pepper, place on a baking tray and pop in a pre heated oven 200 C / 400 F / gas mark 6 for 1 hour or until skin is crisp and cooked through, if you like your skin soft then wrap in foil before cooking.
