Mango, ginger and chilli chicken

    A lightly curried chicken dish with a mango, ginger and chilli coconut sauce served on a bed of rice. A satisfying and complete midweek supper that is ready in a little more than half and hour.

    Serves: 2 

    • 2 chicken breast fillets
    • 1 tablespoon oil
    • 1 teaspoon curry powder
    • 1 mango, cut into chunks
    • 1 small green chilli, deseeded and chopped
    • 1/2 teaspoon finely chopped root ginger
    • 1 small onion, chopped
    • 1/2 tin coconut milk
    • 1 mug rice

    1. Dice the chicken and place in a pre-heated wok with oil. Sprinkle the curry powder over the chicken and stir until the chicken is coated evenly.
    2. Once the chicken has browned add the onion, chilli, mango and ginger, and stir. Let simmer for 5 minutes.
    3. Add the coconut milk, stir and leave to simmer.
    4. Meanwhile cook the rice.
    5. Once the rice has cooked serve up with the chicken and sauce.
