Quick and Easy Fruit Cake

    A deliciously quick and easy fruit cake using St Helen's Farm goats' milk products.

    Serves: 6 

    • 100g (4 oz) St Helen's Farm goats' butter
    • 100g (4 oz) soft brown sugar
    • 2 eggs, beaten
    • 100ml St Helen's Farm goats' milk
    • 225g (8 oz) self raising flour
    • 1/2 tsp ground nutmeg
    • 1/4 tsp ground ginger
    • 275g (10 oz) dried mixed fruit

    1. Preheat the oven to 170 C/ Gas Mark 3. Grease and line a 2lb loaf tin.
    2. Allow the butter to soften then beat it with the sugar until light and creamy.
    3. Sift together the flour and spices.
    4. Gradually stir the milk, eggs and flour and dried fruit into the butter and sugar mixture. Mix well.
    5. Place in the tin and make a slight hollow in the middle.
    6. Bake for about 45 minutes or until firm to touch.

    This is very easy to make and tastes great! I didn't have self raising flour so added one tsp of bicarb to plain flour. Came out really lovely and soft.  -  13 Aug 2011


    Something else. Used dried mixed fruit, plus a handful of leftover cranberries from Xmas baking, and also some past-their-sell-by Medjool dates. Should have baked it for longer than 45 minutes as it is a bit uncooked in the middle.  -  14 Jun 2011
