Roasted Red Pepper Houmous

    This is a twist on the classic Middle Eastern dip. Chickpeas are blended with garlic, roasted red peppers, tahini, olive oil and seasonings. If you don't have smoked paprika, try to hunt some down because it really makes a difference. Enjoy as a sandwich filler, dip or a spread.

    Makes: 375 g approximately

    • 1 (400g) tin chickpeas, rinsed and drained
    • 1-2 cloves garlic, peeled
    • 100g roasted red pepper from a jar
    • 3 tablespoons tahini (sesame paste)
    • 1 tablespoon lemon juice
    • 1 tablespoon olive oil
    • smoked paprika to taste
    • salt and pepper to taste
    • crushed chilli flakes to taste

    1. Place everything into a food processor and blitz until smooth.
