Tofu Cream

    This dairy-free "yoghurt" is quick and easy to make. If you're not offended by the slightly beany taste from tofu, it makes a great dessert. It's smooth, creamy, lightly sweet with vanilla-ry undertones. Try swirling it with a little fruit preserve to create a delicious yoghurt-tofu, yofu. It's also good with fruit, cereal or on cakes and pastries.

    Makes: 425 g approximately

    • 400g organic firm tofu, chopped into large chunks
    • 2 tablespoons oil (any that isn't overpowering in flavour)
    • 1 tablespoon vanilla extract
    • 2 tablespoons honey or to taste
    • 1 pinch salt

    1. Place all the ingredients into a food processor and blend until smooth.
