Mashed potatoes with a twist

    This mash originates from Germany, really easy to make and tastes great too. I serve it with fried eggs, but you can put with it what you like.

    Serves: 4 

    • 1kg potatoes
    • 2 large onions
    • 50g butter
    • 100g streaky bacon
    • paprika
    • salt and pepper

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Boil the potatoes in salted water for 20 minutes or until tender.
    2. Thinly slice the onion and chop the bacon.
    3. Melt half the butter in a frying pan and add the bacon, fry until crisp then remove with a slotted spoon and set aside. Add the onions to the frying pan and fry until soft and golden.
    4. Drain potatoes and return to the pan, add remaining butter, season with salt and pepper then mash until smooth, stir in half the onions and half the bacon.
    5. Transfer to serving dishes and top with remaining bacon and onions, sprinkle with paprika and serve.


    I have cheated once or twice and used smash, a lot quicker.
