Simple Blueberry Muffins

    A delicious muffin recipe that can be adapted to suit your needs. Try substituting the blueberries for nuts, chocolate chips or anything else you fancy.

    Serves: 12 

    • 225g plain flour
    • 5 tablespoons caster sugar
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 175ml milk
    • 1 egg
    • 75g butter, melted
    • 150g fresh blueberries

    1. In a large bowl, mix together flour, sugar, baking powder and salt. Add milk, egg and butter; mix until ingredients are moistened, do not overbeat. Stir in fresh berries. Spoon batter into twelve greased muffin holes.
    2. Bake at 200 C / Gas 6 for about 20 to 25 minutes or until tops spring back when lightly touched. Serve warm.

    Made these with my kids and they loved them, as did their daddy and their grandparents Very easy to make, will be trying these with different fruits and choc chips too  -  07 Sep 2012


    I make these muffins at least once a week (alternating between fresh blueberries and fresh raspberries). Before baking, I sprinkle them with sugar (raw or demamara works nicely). The only thing I found was that you should mix the wet ingredients separately, then add to the dry.  -  15 Jan 2001  (Review from Allrecipes US | Canada)
