About this recipe:
A quick and easy Mediterranean-inspired pasta dish. Macaroni is tossed with roasted red peppers, olives, feta, olive oil, garlic and lemon juice. Simple and utterly delicious!
Makes: 1 - 2 servings
100g macaroni pasta
60g roasted red peppers, diced
4 tablespoons sliced black olives
4 tablespoons crumbled feta cheese
1 tablespoon olive oil
1 tablespoon finely chopped garlic
1 teaspoon lemon juice
salt and pepper to taste
- In a small bowl, combine olive oil and chopped garlic. Set aside.
- Cook pasta in a large pot of boiling water until al dente. Drain.
- Transfer pasta to a medium mixing bowl and add roasted red peppers, olives and feta cheese. Toss with olive oil mixture and lemon juice. Season with salt and pepper. Serve immediately.
