About this recipe: A quick and easy Mediterranean-inspired pasta dish. Macaroni is tossed with roasted red peppers, olives, feta, olive oil, garlic and lemon juice. Simple and utterly delicious!

Makes: 1 - 2 servings

  • 100g macaroni pasta
  • 60g roasted red peppers, diced
  • 4 tablespoons sliced black olives
  • 4 tablespoons crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped garlic
  • 1 teaspoon lemon juice
  • salt and pepper to taste

  1. In a small bowl, combine olive oil and chopped garlic. Set aside.
  2. Cook pasta in a large pot of boiling water until al dente. Drain.
  3. Transfer pasta to a medium mixing bowl and add roasted red peppers, olives and feta cheese. Toss with olive oil mixture and lemon juice. Season with salt and pepper. Serve immediately.
