The Ultimate Carrot Cake

    This is probably the moistest carrot cake that you'll ever make. It's lightly spiced with cinnamon and packed full of carrots, crushed pineapple and walnuts. It's also dairy-free!

    Serves: 12 

    • 250g plain flour
    • 2 teaspoons baking powder
    • 1 1/2 teaspoons bicarbonate of soda
    • 1 teaspoon salt
    • 2 1/2 teaspoons ground cinnamon
    • 4 eggs
    • 350ml vegetable oil
    • 400g caster sugar
    • 300g grated carrots
    • 1/2 (432g) tin crushed pineapple, drained
    • 90g chopped walnuts
    • 75g desiccated coconut

    1. Preheat oven to 170 C / Gas 3. Grease and flour a 20x30cm or similar sized tin. Mix together the flour, baking powder, bicarbonate of soda, salt and cinnamon. Set aside.
    2. In a large bowl, mix sugar, oil and eggs. Beat in flour mixture. Stir in grated carrots, crushed pineapple, chopped nuts and desiccated coconut. Pour into prepared tin.
    3. Bake in the preheated oven for 35 to 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.

    I have made this cake and came out so well. Taste is lovely nice soft and healthier. I added orange zests and one fresh orange juice, instead of pineapple. Carrots and orange are nice combination. I was searching for a good recipe for a carrot cake . thanks a lot.  -  26 May 2014
