Sausage and Spinach Pasta

    This easy Italian pasta dish is quick to throw together. Pasta is tossed with pork sausages and spinach in a tomato sauce. Enjoy with freshly grated Parmesan cheese.

    Serves: 4 

    • 340g pasta
    • 1 tablespoon olive oil
    • 450g spicy Italian pork sausage, sliced
    • 1 onion, chopped
    • 4 cloves garlic, finely chopped
    • 415ml chicken stock
    • 1 teaspoon dried basil
    • 1 (400g) tin chopped tomatoes
    • 285g frozen chopped spinach
    • 40g grated Parmesan cheese

    1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
    2. In a large frying pan, heat oil and sausage; cook through until no longer pink. During the last 5 minutes of cooking, add onion and garlic to pan. Add stock, basil and tomatoes with liquid.
    3. Cook over medium heat for 5 minutes to slightly reduce. Add chopped spinach; cover pan and simmer on reduced heat until spinach is tender.
    4. Add pasta to pan and mix together. Sprinkle with cheese and serve immediately.

    This is an excellent supper for week nights. The only modification I made was to use fresh spinach versus frozen and added it to my colander prior to draining my pasta so that it cooked it slightly. This is a keeper.  -  06 Nov 2008  (Review from Allrecipes US | Canada)


    In response to the previous poster who asked how the sausage should be prepared: my recommendation is to remove the casing- especially if you're serving it to kids. If you don't remove the casing, it could roll back while cooking the sausage pieces and you'll get the inevitable question from your kids, "What's this?" then "What's it made out of?" then "Ewww!" Best bet: use frozen sausages, thaw very lightly in the microwave, then use a sharp knife to cut membrane and remove.  -  29 Jan 2008  (Review from Allrecipes US | Canada)


    This is my family's new favorite recipe! They request it all the time! I make it a little healthier using whole wheat pasta, low-sodium chicken broth, and spicy Italian turkey sausage.
