Spiced Oat and Raisin Cookies

    These cookies quick and easy to make. They are also soft, chewy and incredibly delicious. Enjoy with a cup of tea, coffee or glass of milk.

    Makes: 24 cookies

    • 520g ginger cake mix
    • 80g porridge oats
    • 2 eggs
    • 125ml vegetable oil
    • 70g raisins

    Prep:15min  ›  Cook:7min  ›  Ready in:22min 

    1. Preheat oven to 180 C / Gas 4. Grease baking trays.
    2. Combine cake mix, oats, eggs and oil in large bowl. Beat at low speed with electric mixer until blended. Stir in raisins.
    3. Drop by teaspoonfuls onto baking trays. Bake for 7-9 minutes or until lightly browned. Cool 1 minute on baking tray.

    I made these last night and they are dynamite! A suggestion: I made the first batch dropping the cookies in rounded teaspoons like suggested and they came out a little small and hard. The second batch I made slightly bigger, like a teaspoon and a half, and they came out much softer and chewier. They are really great.  -  29 Nov 2005  (Review from Allrecipes US | Canada)


    Loved this recipe. Used carrot cake mix as that was all I had in the house. I also added 3 Tbsp. of water to this recipe after reading the review from the lady in Canada saying hers did not spread too well. I will use this recipe again.  -  24 Feb 2003  (Review from Allrecipes US | Canada)
