565g fresh tuna, cut into 1.25cm cubes
4 tablespoons finely chopped onion
4 tablespoons finely chopped spring onions
1 teaspoon finely chopped fresh ginger
2 tablespoons lightly crumbled wakame seaweed
1 tablespoon ground roasted macadamia nuts
2 teaspoons sesame oil
1 1/2 teaspoons crushed chillies
8 leaves iceberg lettuce
2 tablespoons coriander leaves, for garnish

Mix together the tuna, onion, spring onions, ginger, seaweed, nuts, sesame oil and crushed chillies in a mixing bowl. Cover and refrigerate at least 1 hour, for the flavours to come together. Arrange the lettuce leaves on a serving plate, spoon the tuna on top and garnish with the coriander.
