About this recipe: These muffins are quick and easy to throw together. They are light, tender and packed full of blueberries. Enjoy for afternoon tea, elevenses or pop into packed lunches.

Makes: 24 muffins

  • 300g fresh blueberries
  • 4 tablespoons plain flour
  • 250g plain flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 50g margarine
  • 300g caster sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 250ml milk

Prep:15min  ›  Cook:25min  ›  Ready in:40min 

  1. Preheat oven to 190 C / Gas 5. Grease muffins tins or line with paper cases.
  2. Sprinkle 4 tablespoons flour over blueberries and stir to coat berries thoroughly.
  3. In a small bowl, whisk together 250g flour, baking powder and salt.
  4. In a large bowl, cream margarine and gradually mix in sugar. Beat eggs and stir into creamed mixture along with vanilla. Stir in milk alternately with flour mixture, mixing well after each addition. Fold in berries. Fill muffin tin 2/3 full with batter.
  5. Bake for 25 minutes.

200g blueberries are plenty 300g as stated would have been too much for this quantity of muffin mixture.good flavour light and moist. - 17 Feb 2014
