About this recipe:This is an utterly delicious "white" vegetarian pizza. A ready-made pizza base is brushed with oil and then topped with spinach, mozzarella and mushrooms.
1 large pizza base, such as Napolina
3 tablespoons olive oil
1 teaspoon sesame oil
30g fresh spinach, rinsed and dried
225g grated mozzarella cheese
75g sliced fresh mushrooms

Preheat oven to 180 C / Gas 4. Place pizza base on baking tray.
In a small bowl, mix together olive oil and sesame oil. Brush onto pizza base, covering entire surface. Stack the spinach leaves, then cut lengthways into 1.25cm strips; scatter evenly over base. Cover pizza with mozzarella and top with sliced mushrooms.
Bake in preheated oven for 8 to 10 minutes or until cheese is melted and edges are crisp.
