    About this recipe: These delicious cookies will warm the cockles of your heart. They are soft, cake-like and melt in your mouth. Enjoy them with a big mug of tea or coffee.

    Serves: 12 cookies

    • 250g plain flour
    • 1/2 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/8 teaspoon salt
    • 1 tablespoon ground cinnamon
    • 1 1/2 teaspoons ground nutmeg
    • 110g light brown soft sugar
    • 100g caster sugar
    • 225g buttery margarine spread
    • 2 tablespoons soured cream
    • 1 tablespoon olive oil
    • 1 1/2 teaspoons almond extract
    • 1 tablespoon amaretto liqueur
    • 1 1/2 teaspoons bourbon
    • 50g chopped almonds (optional)

    1. Preheat oven to 190 C / Gas 5. Grease a baking tray. Sieve together flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg in a medium bowl. Set aside.
    2. Cream together dark brown soft sugar, caster sugar and margarine in a medium bowl. Stir in soured cream, olive oil, almond extract, amaretto and bourbon, blending well after each addition.
    3. Gradually stir flour mixture into sugar mixture until well blended. Stir in almonds if desired. Drop by heaped spoonfuls onto prepared tray.
    4. Bake until just crisp around the edges, 12 to 14 minutes.
