Prawn and crab pots
A deliciously rich and creamy dish for any seafood lover. Prawns and crab are served with a cheesy cream sauce with a crunchy garlic topping.
Ingredients
Serves: 6
- 50g butter
- 4 tablespoons plain flour
- 475ml double cream, divided
- 60g freshly grated Parmesan cheese
- 2 tablespoons dry sherry
- 1/2 teaspoon paprika
- 275g cooked crab meat
- 130g peeled cooked prawns
- 170g garlic-flavoured croutons
- 4 tablespoons chopped fresh parsley
- 60g butter, melted

- Preheat oven to 180 C / Gas 4.
- In a large saucepan over medium heat, melt 50g butter. Remove from heat and beat in flour. Pour in 125ml double cream and whisk well, return to heat.
- Add cheese and stir until creamy. Remove from heat and pour in remaining cream. Stir in sherry, paprika, crab meat, and prawns. Spoon mixture into 6 large individual ramekins.
- In a food processor or liquidiser, blend together croutons and parsley. Top each filled ramekin with crouton mixture. Drizzle melted butter over the top.
- Bake in preheated oven for 20 minutes or until top is browned and bubbly.

I was looking for another way for us to enjoy shrimp and I am so glad that I came across this recipe. This is amazing. Since I didn't have individual ramakins I used a very small casserole dish and made this for 2 people. The only thing I might do differently next time is add a bit of garlic. I sauted diced onions and sliced mushrooms in the melted butter before adding the flour, etc. I also didn't have garlic croutons, and substituted bread crumbs seasoned with some garlic and herb mix.
