Prawn and crab pots

    A deliciously rich and creamy dish for any seafood lover. Prawns and crab are served with a cheesy cream sauce with a crunchy garlic topping.

    Serves: 6 

    • 50g butter
    • 4 tablespoons plain flour
    • 475ml double cream, divided
    • 60g freshly grated Parmesan cheese
    • 2 tablespoons dry sherry
    • 1/2 teaspoon paprika
    • 275g cooked crab meat
    • 130g peeled cooked prawns
    • 170g garlic-flavoured croutons
    • 4 tablespoons chopped fresh parsley
    • 60g butter, melted

    1. Preheat oven to 180 C / Gas 4.
    2. In a large saucepan over medium heat, melt 50g butter. Remove from heat and beat in flour. Pour in 125ml double cream and whisk well, return to heat.
    3. Add cheese and stir until creamy. Remove from heat and pour in remaining cream. Stir in sherry, paprika, crab meat, and prawns. Spoon mixture into 6 large individual ramekins.
    4. In a food processor or liquidiser, blend together croutons and parsley. Top each filled ramekin with crouton mixture. Drizzle melted butter over the top.
    5. Bake in preheated oven for 20 minutes or until top is browned and bubbly.

    I was looking for another way for us to enjoy shrimp and I am so glad that I came across this recipe. This is amazing. Since I didn't have individual ramakins I used a very small casserole dish and made this for 2 people. The only thing I might do differently next time is add a bit of garlic.     I sauted diced onions and sliced mushrooms in the melted butter before adding the flour, etc. I also didn't have garlic croutons, and substituted bread crumbs seasoned with some garlic and herb mix.
