Caramel apple cake

    This moist apple cake is perfect for any occasion. It's packed full of apples, raisins, coconut and walnuts. The delicious caramel glaze is really the icing on the cake!

    Serves: 14 

    • For the Cake
    • 250ml vegetable oil
    • 110g butter, softened
    • 300g caster sugar
    • 3 eggs
    • 375g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1/2 teaspoon vanilla extract
    • 250g peeled and diced apples
    • 75g desiccated coconut
    • 150g raisins
    • 120g chopped walnuts
    • For the Glaze
    • 150g dark brown soft sugar
    • 110g butter
    • 4 tablespoons milk

    1. Preheat oven to 170 C / Gas 3. Grease and flour one 26cm tube cake tin.
    2. Combine oil, butter and sugar together. Beat well with a mixer. Add eggs, flour, bicarbonate of soda, salt and vanilla; mix well. Stir in apples, coconut, raisins and walnuts. Pour batter in prepared tin.
    3. Bake for 90 minutes. Remove cake from oven. Let it cool in the tin for a few minutes and then remove from tin.
    4. In a small saucepan, heat dark brown soft sugar, butter and milk. Bring mixture to the boil and stir for 1 minute. Pour over warm cake.

    I added 1 1/2 teaspoons cinnamon, 3/4 teaspoons ground cloves and 3/4 teaspoons ground allspice. I also sprinkled additional walnuts on top before baking. Awesome!  -  20 Feb 2011  (Review from Allrecipes US | Canada)
