    Ingredients
    Serves: 12 

    • 375g plain flour
    • 3 teaspoons baking powder
    • 2 teaspoons bicarbonate of soda
    • 1/2 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 4 eggs
    • 400g caster sugar
    • 350ml vegetable oil
    • 500g apple sauce
    • 1 teaspoon vanilla extract

    Method

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 26cm tube cake tin.
    2. Sieve together the flour, baking powder, bicarbonate of soda, salt and cinnamon. Make a well in the centre and pour in the eggs, sugar, oil, apple sauce and vanilla. Mix well and pour into prepared tin.
    3. Bake in the preheated oven for 50 to 60 minutes or until a skewer inserted into the centre of the cake comes out clean. Let cool in tin for 10 minutes, then turn out onto a wire rack and cool completely.
