A whole chicken is rubbed inside and out with dried herbs, then roasted with lemon and olive. Simple but very delicious.

Ingredients

1 dessertspoon Italian herb seasoning
1/4 teaspoon salt
1/2 teaspoon mustard powder
1 teaspoon garlic salt
1/2 teaspoon freshly ground black pepper
1 whole chicken
2 lemons
2 tablespoons olive oil

Preparation method

1. Preheat oven to 180 C / Gas mark 4.
2. Combine the seasoning, salt, mustard powder, garlic salt and black pepper; set aside. Rinse the chicken thoroughly, and remove the giblets. Place chicken in a 23x33cm (9x13 in) baking dish.
3. Squeeze the juice of the 2 lemons into a small bowl or cup, and mix with the olive oil and the spice mixture. Coat the chicken inside and out with the mixture, and drizzle the any remaining mixture over the chicken.
4. Bake in the preheated oven for 1 1/2 hours, or until juices run clear, basting several times with the juices.

    This chicken was great! I mixed all of the spices, olive oil and lemon juice and rubbed it under the skin of the chicken and then over the top of the skin and poured the remainder in the cavity. I put about 175ml water in the bottom of the tin and baked the chicken upsidedown with the breasts in the juices. I covered the whole thing in foil and in 2 hours the flavourful meat was falling off the bones. My guests raved and everyone ate way too much. Delicious!

    Very good. I used boneless, skinless breasts.Tasty and tender. Baked for 30 min.

    Very simple! I left half of the squeezed lemon inside the chicken while it was roasting for extra flavour!
