Lemon and thyme lamb chops

    Marinated lamb chops with fresh summery flavours from the Mediterranean. Make extra marinade to use on roasted veggies.

    Serves: 12 

    • 100ml (4 fl oz) olive oil
    • 4 tablespoons lemon juice
    • handful chopped fresh thyme
    • salt and freshly ground black pepper to taste
    • 12 lamb chops

    1. Stir together olive oil, lemon juice and thyme in a small bowl. Season with salt and pepper to taste. Place lamb chops in a shallow dish, and toss with the olive oil mixture. Marinate for 1 hour.
    2. Preheat barbecue for high heat.
    3. Lightly oil cooking grate. Place lamb chops on barbecue, and discard marinade. Cook for 10 minutes, turning once, or to desired doneness.

    Used different ingredients. I can't seem to follow any recipes exactly, so of course I changed this one. I added garlic, about 6 cloves chopped, instead of thyme, I used approx 2 TBS fresh-chopped rosemary (I have it growing in my garden), some fresh oregano, and I did use the olive oil, lemon juice and salt/pepper to taste, but I doubled the amounts to marinade the lamb chops. I marinated the chops overnight about 24-30 hours. We grilled it in the next evening. Served with potatoes, grilled veggies, and a nice red wine. it was GREAT!  -  24 Jul 2008


    Altered ingredient amounts. We loved this! I put the chops in a dish, drizzled them with olive oil (way less than what is called for), drizzled the juice of half a lemon over, then snipped some fresh thyme and rosemary on top. I marinaded them overnight, and the flavour was just perfect! Great recipe. Thanks, Diane!  -  24 Jul 2008
