About this recipe:A fantastic way of making use of apricots when in-season. They are blended with shallots, peppers, pineapple, tomato, chilli, coriander, cumin and lime juice. The sweetness from the fruit goes exceedingly well with the spiciness from the chilli.
465g chopped fresh apricots
160g shallots, julienned
75g chopped green pepper
75g chopped red pepper
80g chopped fresh pineapple
4 tablespoons chopped cherry tomatoes
1 Scotch bonnet chilli, seeded and finely chopped
2 cloves garlic, finely chopped
1 teaspoon finely chopped fresh coriander
1/2 teaspoon ground cumin
4 tablespoons fresh lime juice

Mix the apricots, shallots, green pepper, red pepper, pineapple, cherry tomatoes, chilli, garlic, coriander, cumin and lime juice together in a bowl; refrigerate at least 2 hours before serving.
