    About this recipe: A fantastic way of making use of apricots when in-season. They are blended with shallots, peppers, pineapple, tomato, chilli, coriander, cumin and lime juice. The sweetness from the fruit goes exceedingly well with the spiciness from the chilli.

    Serves: 15 

    • 465g chopped fresh apricots
    • 160g shallots, julienned
    • 75g chopped green pepper
    • 75g chopped red pepper
    • 80g chopped fresh pineapple
    • 4 tablespoons chopped cherry tomatoes
    • 1 Scotch bonnet chilli, seeded and finely chopped
    • 2 cloves garlic, finely chopped
    • 1 teaspoon finely chopped fresh coriander
    • 1/2 teaspoon ground cumin
    • 4 tablespoons fresh lime juice

    1. Mix the apricots, shallots, green pepper, red pepper, pineapple, cherry tomatoes, chilli, garlic, coriander, cumin and lime juice together in a bowl; refrigerate at least 2 hours before serving.
