    About this recipe: A fantastic way of making use of apricots when in-season. They are blended with shallots, peppers, pineapple, tomato, chilli, coriander, cumin and lime juice. The sweetness from the fruit goes exceedingly well with the spiciness from the chilli.

    Ingredients
    Serves: 15 

    • 465g chopped fresh apricots
    • 160g shallots, julienned
    • 75g chopped green pepper
    • 75g chopped red pepper
    • 80g chopped fresh pineapple
    • 4 tablespoons chopped cherry tomatoes
    • 1 Scotch bonnet chilli, seeded and finely chopped
    • 2 cloves garlic, finely chopped
    • 1 teaspoon finely chopped fresh coriander
    • 1/2 teaspoon ground cumin
    • 4 tablespoons fresh lime juice

    Method

    1. Mix the apricots, shallots, green pepper, red pepper, pineapple, cherry tomatoes, chilli, garlic, coriander, cumin and lime juice together in a bowl; refrigerate at least 2 hours before serving.

    This was my first attempt at any sort of salsa and I am REALLY pleased with how it came out. It's an amazing blend of sweet and spicy. I added a second Habanero pepper and a little bit more cilantro and pineapple and it was a MAJOR success!  -  22 Aug 2010  (Review from Allrecipes US | Canada)

    My tree had an over abundance of apricots this year. I have a party to go to and thought this sounded tasty so I doubled the recipe. My husband couldn't get over the flavor and even later came in and said what a great taste it left in his mouth. I make lots of salsas and let's just say, half of the salsa I made for the party is staying home, I am not sharing.
