    About this recipe: These fruity morsels are incredibly moreish. A buttery biscuit base is topped with a mixture of apricots, walnuts and coconut. They are perfect for snacking on and for dessert.

    Ingredients
    Makes: 24 bars

    • 115g butter, softened
    • 4 tablespoons caster sugar
    • 125g plain flour
    • 85g dried apricots
    • 250ml water
    • 2 eggs
    • 220g light brown soft sugar
    • 5 tablespoons plain flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla extract
    • 1 teaspoon lemon juice
    • 115g chopped walnuts
    • 50g desiccated coconut (optional)
    • 40g icing sugar for dusting

    Method

    1. Preheat oven to 170 C / Gas 3. In a medium bowl, mix together butter, sugar and 125g flour. Press into the bottom of an ungreased 20x30cm baking tin. Bake for 25 minutes in preheated oven.
    2. In small saucepan, bring apricots and water to the boil and cook for 10 minutes. Drain, chop and set aside to cool.
    3. In a medium bowl, beat eggs and dark brown soft sugar. Stir in 5 tablespoons flour, baking powder, salt, vanilla and lemon juice. Fold in nuts and chopped apricots. Stir in coconut, if desired. Pour over the prepared base.
    4. Bake for an additional 20 minutes in the preheated oven or until firm. Cool and dust with icing sugar before cutting into squares.

    I made these for Christmas, along with several other cookies. THESE were gone first! I had to leave out the nuts and thought it would look more festive with the coconut sprinkled on top.
