    1. Mix the apricot jam, wine and ground ginger together in a small bowl; set aside.
    2. Season the pork chops with salt and pepper. Heat the oil in a frying pan over medium high heat. Add the pork chops and cook until brown on each side and no longer pink in the centre, about 4 minutes per side.
    3. Remove chops from the frying pan. Reduce heat to medium low. Using the same frying pan, pour in the apricot jam mixture and simmer until thickened, about 4 minutes. Return pork chops to the frying pan, turning to coat each side in the sauce; cook 1 minute.

Made this a couple of times, first time was to recipe wife loved it, second time I added a bit more ginger increased to 3/4 of a tea spoon and added 12 tinned apricots halves to the sauce. Served with asparagus tips and a baked potato.  -  15 Apr 2016

I didn't have any wine, so I substituted apple juice and a splash of lemon juice. It was delicious! My husband doesn't even like apricots all that much, but he thought this was a good recipe.  -  25 Jun 2008  (Review from Allrecipes US | Canada)

Wow! These are fabulous! My daughter, who hates pork gobbled them up, and told me I finally found a way to cook pork where she will eat it! This recipe rocks!  -  10 Jun 2007  (Review from Allrecipes US | Canada)
