About this recipe:This is a quick and easy pork dish, which is perfect for any weeknight. Pan-seared pork chops are served with a fruity apricot and ginger sauce. Enjoy with a side of rice.
100g apricot jam
75ml fruity white wine, such as Gewurztraminer
1/2 teaspoon ground ginger
salt and pepper to taste
2 tablespoons olive oil
4 (1.25cm) thick boneless pork chops

Mix the apricot jam, wine and ground ginger together in a small bowl; set aside.
Season the pork chops with salt and pepper. Heat the oil in a frying pan over medium high heat. Add the pork chops and cook until brown on each side and no longer pink in the centre, about 4 minutes per side.
Remove chops from the frying pan. Reduce heat to medium low. Using the same frying pan, pour in the apricot jam mixture and simmer until thickened, about 4 minutes. Return pork chops to the frying pan, turning to coat each side in the sauce; cook 1 minute.
Made this a couple of times, first time was to recipe wife loved it, second time I added a bit more ginger increased to 3/4 of a tea spoon and added 12 tinned apricots halves to the sauce. Served with asparagus tips and a baked potato. - 15 Apr 2016
