Pork Chops with Apricot Sauce

    This is a quick and easy pork dish, which is perfect for any weeknight. Pan-seared pork chops are served with a fruity apricot and ginger sauce. Enjoy with a side of rice.

    Serves: 4 

    • 100g apricot jam
    • 75ml fruity white wine, such as Gewurztraminer
    • 1/2 teaspoon ground ginger
    • salt and pepper to taste
    • 2 tablespoons olive oil
    • 4 (1.25cm) thick boneless pork chops

    1. Mix the apricot jam, wine and ground ginger together in a small bowl; set aside.
    2. Season the pork chops with salt and pepper. Heat the oil in a frying pan over medium high heat. Add the pork chops and cook until brown on each side and no longer pink in the centre, about 4 minutes per side.
    3. Remove chops from the frying pan. Reduce heat to medium low. Using the same frying pan, pour in the apricot jam mixture and simmer until thickened, about 4 minutes. Return pork chops to the frying pan, turning to coat each side in the sauce; cook 1 minute.

    Made this a couple of times, first time was to recipe wife loved it, second time I added a bit more ginger increased to 3/4 of a tea spoon and added 12 tinned apricots halves to the sauce. Served with asparagus tips and a baked potato.  -  15 Apr 2016
