Pan-Fried Trout Fillets

    A quick and easy Chinese-inspired fish recipe. Seasoned trout is pan-fried with garlic, ginger and spring onions. It's perfect with rice or salad.

    Serves: 4 

    • 4 (175g) fillets boneless, skinless rainbow trout
    • 2 teaspoons soy sauce
    • salt and pepper to taste
    • 1 teaspoon caster sugar
    • 1 teaspoon olive oil
    • 1 teaspoon finely chopped garlic
    • 1 teaspoon finely chopped fresh ginger
    • 4 spring onions, chopped

    1. Rub fillets with soy sauce. Season with salt, pepper and sugar; set aside.
    2. Heat oil in a large frying pan over medium-high heat. Add garlic, ginger and spring onions; cook and stir until golden brown.
    3. Add fillets and cook until browned and crispy, about 3 minutes. Turn fillets over and continue cooking until the fish flakes easily with a fork, about 3 minutes more.
