Easy blueberry muffins

    These cake-like muffins are simply divine. They are sweet and packed full of fresh blueberries. Enjoy as a snack or with afternoon tea.

    Makes: 12 muffins

    • 110g butter
    • 250g plain flour
    • 250g caster sugar
    • 2 eggs
    • 125ml milk
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 225g fresh blueberries

    1. Preheat oven to 180 C / Gas 4. Grease and flour a muffin tin or line with paper cases. Sieve flour, baking powder and salt together and set aside.
    2. Cream butter and sugar until light and fluffy. Add eggs and beat well. Add milk and flour mixture. Beat until combined. Stir in blueberries.
    3. Fill muffin tin 2/3 full. Bake at 180 C / Gas 4 for 25 to 30 minutes.

    Very nice! The recipe does not say when to add milk. I beat mine into the egg, butter, and sugar mixture. Like another reviewer, I added a little vanilla.  -  06 Mar 2012

    My little 3 yr old made these and we added some raspberries in for extra as didn't have enough blueberries for the recipe... They have risen well Can't to try them  -  08 Jan 2012
