About this recipe: This wonderful fish supper couldn't be any easier. Cheesy spinach is topped with cod, breadcrumbs and cheese before being baked to perfection.


Serves: 4 

  • 285g frozen chopped spinach, thawed and squeezed dry
  • 140g mature Cheddar cheese, grated and divided
  • 35g dry breadcrumbs, divided
  • 1 egg, beaten
  • 450g fillets cod
  • salt and pepper to taste

Prep:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Preheat oven to 170 C / Gas 3.
  2. In a bowl, mix the spinach, half of the Cheddar cheese, 4 tablespoons breadcrumbs and the egg. Spread the mixture into the bottom of a small baking dish.
  3. Arrange cod fillets on top and season with salt and pepper. Sprinkle over remaining Cheddar cheese and breadcrumbs.
  4. Bake for 20 minutes in the preheated oven or until fish flakes easily with a fork.

Alternatives to cod:

Try this recipe with inexpensive fresh coley or pouting. They both belong to the cod family but are much cheaper and available in larger supermarkets or fishmongers.

Have had this four times now, and it's fast becoming a favourite with my husband. I have used a cod block, as well as smoked undyed haddock and both work equally well. Such a simple recipe that gives wonderful results. - 05 Apr 2014
