    About this recipe: The secret ingredient to this incredibly moist cake is mayonnaise! It's quick to throw together and everyone will love it. You can also use this recipe to make cupcakes.

    Serves: 12 

    • 85g plain chocolate, chopped
    • 250ml mayonnaise
    • 2 tablespoons vinegar
    • 2 tablespoons vanilla extract
    • 375g plain flour
    • 400g caster sugar
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon salt
    • 475ml warm water

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm baking tin.
    2. Melt the chocolate in a large bowl in the microwave. Stir in the mayonnaise, vinegar and vanilla.
    3. Combine the flour, sugar, bicarbonate of soda and salt together. Gradually fold into the chocolate mixture.
    4. Slowly stir in the warm water. Pour batter into prepared tin.
    5. Bake in preheated oven for 30 to 35 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
