About this recipe: This is a super-moist chocolate cake that's a cinch to make. Serve as is or top with your favourite icing. Enjoy for dessert or afternoon tea.


Makes: 1 20x30cm cake

  • 110g margarine
  • 250ml water
  • 60g plain chocolate
  • 250g plain flour
  • 400g caster sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons bicarbonate of soda
  • 125ml soured milk

  1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm tin. In a microwave-safe bowl, microwave chocolate, margarine and water until melted. Stir occasionally until chocolate is smooth. Allow to cool to room temperature.
  2. In a large bowl, mix together flour, sugar, salt and bicarbonate of soda. Pour in milk and eggs. Mix the cooled chocolate mixture into the batter. Pour into prepared tin.
  3. Bake at 180 C / Gas 4 for 30 to 35 minutes or until a skewer inserted into the cake comes out clean. Spread with buttercream icing.
