Yummy shortbread

    Just four ingredients stand between you and a great tasting shortbread biscuit! These treats are incredibly buttery and moreish. One is never enough!

    Makes: 24 biscuits

    • 450g butter
    • 200g fructose (fruit sugar)
    • 160g white rice flour
    • 375g plain flour

    Prep:15min  ›  Cook:35min  ›  Ready in:50min 

    1. Preheat oven to 180 C / Gas 4.
    2. Cream together butter and sugar. Mix in rice flour until well blended. Add plain flour. Remove from bowl.
    3. Knead dough for 5 minutes. Roll dough out and place in a greased and floured 20x30cm or similar sized tin.
    4. Prick the top with a fork. Bake 35 minutes or until golden brown and a knife inserted in the middle comes out clean. Cut into bars and allow to cool in the tin.


    Can be purchased in health speciality shops. If unavailable, use 300g caster sugar.

    A friend gave me this recipe and I love it. I roll out the dough and use cookie cutters. I do cut recipe in half as it does produce alot of cookies  -  19 Nov 2007  (Review from Allrecipes US | Canada)
