About this recipe:A quick and easy pasta dish for the bacon lovers. Penne is tossed with sauteed onion, crisp bacon and Parmesan cheese. Serve with a side salad and/or garlic bread, if desired.
450g streaky bacon, coarsely chopped
1 onion, chopped
450g penne pasta
4 tablespoons olive oil
40g grated Parmesan cheese

Place chopped bacon and onion in a frying pan over medium heat. Cook and stir until the bacon is crisp and the onion is beginning to brown, about 10 minutes.
Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne and return to the boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but is still firm to the bite, about 11 minutes. Drain pasta, transfer to a large serving bowl and stir in the olive oil to coat the pasta.
Drain off bacon fat from the pan, leaving a couple of tablespoons or to taste. Stir the cooked bacon mixture into the pasta and toss with the Parmesan cheese.
Very simple and easy recipe. However changed it slightly. No onion, fry the bacon and boil pasta as instructed. When done, put a layer of cheese in an oven prove dish, then put in the pasta and bacon, mixing them. Finally, add a layer of cheese on top and pop in the oven. Make sure the cheese is melted, but don't let the pasta dry out! Also served with garlic bread - 10 Jun 2015
