Baked mackerel and stuffing

    This is a delicious fish supper that can be enjoyed any day of the week. Mackerel is baked on top of a layer of stuffing. Enjoy with rice, potatoes or pasta.

    Serves: 6 

    • 1.1kg fillets mackerel
    • 225g herb-seasoned stuffing mix
    • 350ml boiling water or as needed
    • 110g butter, melted
    • salt and pepper to taste
    • 30g butter, melted
    • 75g finely chopped onion
    • 4 sprigs fresh dill

    1. Preheat oven to 260 C / Gas 10.
    2. Rinse fillets in cold water, pat dry and season with salt and pepper. Combine dry stuffing 110g melted butter and just enough hot water to make the mix come together.
    3. Cover a baking tray with foil. Spread stuffing on top of foil. Place fillets on top of stuffing. Brush fillets with remaining butter and sprinkle with onions. Top with dill and cover the baking tray tightly with another piece of foil.
    4. Bake on centre shelf of preheated oven for 10 minutes, reduce oven temperature to 200 C / Gas 6 and bake for an additional 60 minutes.

    I made this recipe for my parents and grandparents. It was fantastic. We all thought that 70 minutes to cook was too much, so we cooked it for 10 minutes at 500 degrees with the foil covering it and about 20 minutes at 400 without the foil. I didn't use onion.
