Baked Brie with Brandy

    A simple, yet elegant starter that's perfect for any dinner party. Brie is baked in a brandy and tarragon sauce with almonds and mushrooms. Serve with crusty bread, crostini or crackers.

    Serves: 8 

    • 30g butter
    • 1 teaspoon crushed garlic
    • 2 tablespoons flaked almonds
    • 3/4 (300g) tin chopped mushrooms, drained
    • 1 tablespoon brandy
    • 1 teaspoon dried tarragon
    • 225g wedge Brie cheese, rind removed

    1. Preheat oven to 180 C / Gas 4.
    2. Melt butter in a medium saucepan over medium heat. Mix in garlic and almonds, heating until almonds are lightly browned. Stir in mushrooms and cook until tender, about 5 minutes. Cover with brandy and sprinkle with tarragon.
    3. Place Brie in a small baking dish. Pour the mushroom and brandy mixture over Brie. Bake in the preheated oven 20 minutes or until bubbly.

    An easy recipe and good starter, unfortunately I served it with too much toasted bread and didn't leave it in the oven long enough for all the cheese to melt but it was still very enjoyable. Next time I want to try it with Applewood cheese.  -  03 Oct 2013


    Very elegant recipe, appropriate for fancy dinner parties. I had difficulty removing the brie coating, but the mix of flavors was superb and worth the effort. I used fresh mushrooms without a problem, and also substituted apple jack flavored brandy.
