A great way of serving fish to non-fish lovers. Cod is topped with Boursin cheese, tomatoes and Parmesan before being baked to perfection.
Try this recipe with inexpensive fresh coley or pouting. They both belong to the cod family but are much cheaper and available in larger supermarkets or fishmongers.

This recipe was very tasty and a flavourful way to prepare fish, particularly if you're not a big fan of fish generally. There was an awful lot of liquid left in the baking dish though so not sure if I did something wrong. Next time I think I'll leave out the melted butter as I'm not sure its needed with the tomatoes and Boursin cheese. Great recipe for serving fish to non fish lovers. - 03 Nov 2015
