    About this recipe: If you love sweet, chocolately and gooey cakes, these brownies are for you. Serve for dessert with fresh berries, whipped cream or ice cream.

    Serves: 8 

    • 4 eggs
    • 400g caster sugar
    • 60g plain flour
    • 45g unsweetened cocoa
    • 1/2 teaspoon salt
    • 225g butter, melted
    • 2 teaspoons vanilla extract
    • 115g chopped pecans

    1. Preheat oven to 170 C / Gas 3. Grease and flour a 20cm square tin. In a food processor or liquidiser, beat eggs for 2 minutes.
    2. In a large bowl, mix together the sugar, flour, cocoa and salt. Slowly beat in the eggs. Beat in the butter and vanilla. Stir in the chopped pecans. Spread batter in prepared tin.
    3. Bake in the preheated oven for 45 to 50 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
